How to help out the budget? What to cook while being frugal?
Beans of course! Use beans as your main protein, and use meat or meat broth to flavor them. Serve some rice and/or cheese with them, and you have a complete protein. Add some vegies, and you have a very nutritious meal.
Here’s a dish that I like. It is Chile Verde Beans and I serve it with Queso Fresco (that’s Mexican cheese), tortillas, tortilla chips, fresh cilantro, avocado, sour cream and homemade salsa. Yum! We like to eat raw vegies with dip with many of our meals, and this one is no exception. I also like to make a Mexican Slaw with this.
To make that just:
Grate or chop green cabbage into small pieces. Add some chopped cilantro and red or green onion. Make a vinaigrette with seasoned rice wine vinegar, olive oil and white sugar, salt and pepper to taste. Toss and refrigerate until you serve it. Tastes better the next day.
